Homemade Pancakes

- 1 cup flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 3 tablespoon sugar
- 1 cup milk
- 1 egg
- 2 tablespoon oil
- 1 teaspoon vanilla
- Heat skillet or griddle on medium heat.
- Whisk dry ingredients in a large bowl.
- Whisk wet ingredients in a medium bowl.
- Combine wet ingredients in the bowl with the dry ingredients and gently stir until well combined. (DO NOT OVERMIX!)
- Pour ¼ cup of batter onto the skillet, and cook until bubbles appear on the surface
- Flip pancake with a spatula, and cook until browned on the other side.
