Whole Wheat Pancakes with Strawberry Vanilla Compote
- Pancakes:
- ½ cup all-purpose flour
- ½ cup whole wheat flour
- 2 teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoon sugar
- 1 cup milk
- 1 egg
- 2 tablespoon butter, melted
- 1 teaspoon vanilla
- Strawberry Vanilla Compote:
- ¼ cup water
- 2 cups of strawberries, sliced
- 1 ½ tablespoon sugar
- ½ teaspoon vanilla
- Pinch of salt
- Pancakes:
- Heat skillet or griddle over medium heat.
- Whisk dry ingredients in a large bowl.
- Whisk wet ingredients in a medium bowl.
- Combine wet ingredients in the bowl with the dry ingredients and gently stir until well combined and the batter is smooth. (DO NOT OVERMIX!)
- Pour ¼ cup of batter into the skillet, and cook until bubbles appear on the surface
- Flip pancake with a spatula, and cook until browned on the other side.
- Strawberry Vanilla Compote
- In a pan combine all ingredients and cover.
- Turn heat up to medium & cook.
- Stir occasionally to prevent sticking.
- Cook for about 10-20 minutes until desired consistency.
