2medium sweet potatoes peeled and dicedabout 3 cups
3/4teaspoonsalt
½teaspoonpepper
½teaspoongarlic powder
½teaspoononion powder
½teaspooncomplete seasoning
Instructions
Place the 1 tablespoon of olive oil and butter in a 12 inch cast iron skillet on medium heat.
Saute diced chicken andouille sausage links and set aside.
Add sweet potatoes and stir until well covered with oil and butter. Press them down to make sure they are evenly layered in the skillet. After about 10 minutes stir.
Add the onions, peppers, and seasonings and cook for about 10 minutes stirring occasionally. Add additional oil if needed to make sure the potatoes don’t stick to the pan and to ensure sweet potatoes cook until they become tender.
Add garlic and cook for about 2 minutes.
Return the sausage to the skillet and cook for about 3 minutes until warmed.
