Who doesn’t love a hearty bowl of tomato soup? It’s the ultimate comfort food. I’m always looking for a new, delicious recipe, and decided to give one of Chrissy Teigen’s a try. Chrissy's recipe Roasted Tomato Soup recipe is from Chrissy's first cookbook, Cravings which has simple ingredients, is easy to follow, and the best part is it's perfect for a cold winter night.
3herb sprigsrosemary,thyme, oregano, whatever, plus more for garnish
2tablespoonsextra-virgin olive oil
1small onionfinely diced
5clovesgarlicminced
2 1/2cupslow-sodium chicken broth
Kosher salt and freshly
ground black pepper
Instructions
Preheat the oven to 450°F. Line a baking sheet with foil.
Quarter and core the tomatoes. Arange cut-side up, on the baking sheet. Drizzle with the oil, then sprinkle with the salt and pepper.
Roast until softened and the edges are charred, 35 to 40 minutes.
Tie the herbs with a piece of twine into an herb bundle.
In a large saucepan, heat the oil over medium-high heat. Add the onion and cook, stirring, until softened, 6 to 8 minutes. Add the garlic and cook 1 more minute. Add the roasted tomatoes to the pan and break them up with a spoon. Add the broth and herb bundle and bring to a boil, then reduce the heat and simmer until thickened, 25 to 30 minutes.
Discard the herbs. Transfer the soup to a blender or use an immersion blender and puree until smooth. Season to taste with salt and pepper.
