Chrissy Teigen's Tomato Soup Recipe

Who doesn’t love a hearty bowl of tomato soup? It’s the ultimate comfort food. I’m always looking for a new, delicious recipe, and decided to give one of Chrissy Teigen’s a try. Chrissy's recipe Roasted Tomato Soup recipe is from Chrissy's first cookbook, Cravings which has simple ingredients, is easy to follow, and the best part is it's perfect for a cold winter night.

Ingredients
  

  • 4 pounds ripe tomatoes Roma, plum, vine-ripened, whatever
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 herb sprigs rosemary,thyme, oregano, whatever, plus more for garnish
  • 2 tablespoons extra-virgin olive oil
  • 1 small onion finely diced
  • 5 cloves garlic minced
  • 2 1/2 cups low-sodium chicken broth
  • Kosher salt and freshly
  • ground black pepper

Instructions
 

  • Preheat the oven to 450°F. Line a baking sheet with foil.
  • Quarter and core the tomatoes. Arange cut-side up, on the baking sheet. Drizzle with the oil, then sprinkle with the salt and pepper.
  • Roast until softened and the edges are charred, 35 to 40 minutes.
  • Tie the herbs with a piece of twine into an herb bundle.
  • In a large saucepan, heat the oil over medium-high heat. Add the onion and cook, stirring, until softened, 6 to 8 minutes. Add the garlic and cook 1 more minute. Add the roasted tomatoes to the pan and break them up with a spoon. Add the broth and herb bundle and bring to a boil, then reduce the heat and simmer until thickened, 25 to 30 minutes.
  • Discard the herbs. Transfer the soup to a blender or use an immersion blender and puree until smooth. Season to taste with salt and pepper.
