Before I being, has anyone been experiencing random cold/hot weather lately? Let me tell you, in my current area, one day it’s freezing, and the next day it’s time for skirts and tank tops. I have officially pulled out my fall boots and have been wearing them faithfully, but I still have my summer attire ready and waiting.
I truly have a love/hate relationship with the fall and winter season. During this time of the year, I have a hard time adjusting to the cold temperatures. But on the same token, I love the holiday season spirit, the creative recipes (soup-based) that have fall/winter themes, and I especially love the time that I have to spend with my family.
This time of year, I literally eat soup every day. That’s a lot for me to say, being that I never eat left-overs. Soups are so easy to make, pack for lunch, and if you put some thought into it, it could be one of the healthiest meals of the day. Too bad I live in a house full of males who can careless about soups.
Let me tell you, they ain’t having it!
My males (husband & boys) need carbs and meat with just about every meal. I mean, they can handle soup and yes, soup can include those ingredients but, the consistency of soup every day, would bore them. My family wants hearty meals packed with love. Can you blame them?

Every now and then I slide in a soup dish on the menu which is what I did when I made this yummy Shrimp and Corn Chowder.
This soup is creamy and full of flavor. Most importantly it is fulfilling. One bowl of this specialty made soup, will have you and your family asking for more. If you get super-bold, try adding your favorite side of bread and you will be on cloud 9 and ready for a quick nap. LOL! Honestly, this soup dish will have anyone who tries it respecting your expertise in the kitchen, believe me!

- 1 16 oz bag of frozen corn
- ½ cup unsalted butter
- ½ cup flour
- ½ onions, diced
1 quartchicken stock
- 1 quart half and half
- ½ tablespoon of kosher salt
- 2 teaspoon of Italian seasoning
- 1 pound of shrimp, thawed
- Melt butter is a large pot and whisk in the flour to make a light roux.
- Add onion and cook until they are tender, about 5 minutes.
- Blend in chicken stock and bring to a light boil.
- Blend in half and
- Add corn and seasonings
- Lower heat to a simmer. Simmer for about 15 minutes.
- Add shrimp and cook about 5 minutes.
