Fried Rice
Fried rice anyone? Who would pass up a good serving of perfectly fried rice? This is the foundation at Chinese restaurants but it can also be a signature dish in your home. It is easy to prepare and can be ready in minutes. Also, you can customize this dish to fit your likings. The vegetables and/or protein can be changed or altered to reflect your personality. I encourage my readers to whip this up for dinner as a side or entrée. Have fun!

Ingredients
- 2 T your oil preference
- 8 oz bag of frozen carrots and peas
- ½ onion, diced
- 3 eggs, beaten
- 2 cups of white or brown rice, cooked
- 1/2 T Sesame oil
- ¼ cup soy sauce
- Salt and pepper to taste
- Optional- 1 cup of cooked chicken, beef, shrimp etc
Instructions
- Put one tablespoon of oil in skillet and let heat on medium heat. Add beaten eggs and scramble, until cooked. Remove and set aside.
- Heat last tablespoon and then add frozen veggies and onions and sauté for about 5 minutes until onions are translucent.
- Add rice and season with salt and pepper. Stir for about a minute.
- Stir in eggs then add sesame oil and soy sauce. Add meat if you are using meat. Stir frequently until the dish is thoroughly heated.
