  • 1 lb. chicken thighs or tenders

  • Onion

  • Red pepper 

  • Green pepper 

  • Chicken broth

  • Seasonings

  • Heavy cream

  • Mexican cheese (this can be substituted for other cheese if needed)

  • Pasta

  • Cut up the chicken, onions, and peppers

  • Use saute or browning function (heat oil and butter)

  • Stir in the onions and peppers (cook it for 30 seconds)

  • Stir in the broth

  • Add in the chicken

  • Add in the pasta (cook it on high for 5 minutes)

  • Carefully remove the lid (watch out for the steam)

  • Stir in the heavy cream

  • Add the cheese (do this 1 cup at a time)

Ingredients

Chicken

  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 pound chicken thighs diced

Instant Pot Chicken Spaghetti

  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon butter
  • 1 onion (1/2 cup) chopped fine
  • 1/2 red pepper(1/2 cup) chopped fine
  • 1/2 green pepper(1/2 cup) chopped fine
  • 3 cups chicken broth
  • 1 pound spaghetti noodles broken in half
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup heavy cream
  • 2 cups of Mexican cheese

Instructions

  • Season chicken with garlic powder, onion powder, paprika, pepper, salt.
  • Using saute or browning function, heat oil and butter.
  • Stir in onions, peppers, seasonings and cook about 3 minutes.
  • Stir in broth.
  • Add chicken.
  • Add pasta.
  • Lock lid in place and close pressure value. Cook high for 5 minutes.
  • Turn off pressure cooker and quick release pressure. Carefully remove lid, allowing steam to escape.
  • Stir in heavy cream and cook using saute/browning function until heavy cream has thickened and pasta is fully tender, 2 to 5 minutes. Turn off pressure cooker.
  • Add cheese 1 cup at a time until melted and smooth.

Notes
