Macaroni salad! Yummy! I just love this dish.  I do not know why, but it is so refreshing. I always look forward to gatherings that may have this dish such as cookouts or family gatherings. One thing about macaroni salad I can’t stand is when the entire dish is drenched in mayonnaise!  C’mon Man! That seems to be the common way it is sold in stores. I have tried several brands but it seems like I am eating a spoonful of mayonnaise. YUCK! Hey, if you like it that way then to each its own.  I’ll stick to the homemade way.  After speaking to my mom about macaroni salad she informed me where to gather the ingredients and how to create the dish with a perfectly balanced amount of mayonnaise.  So if you have a summer BBQ, picnic, or potluck coming up take a leap of faith and give this dish a try, you won’t regret it!

Macaroni Salad

Serves: 4-6
This macaroni salad is bound to please any quest that digs in at your next cookout, pot luck, or picnic.
Ingredients
  • 2 cups macaroni, uncooked
  • ¾ cup mayo
  • ½ cup relish
  • 1/8 tsp. salt
  • 1/8 tsp pepper
  • ½ tsp sugar
  • ½ small onion, diced
  • ½ green pepper, diced
  • ½ red pepper, diced
  • 1 celery stalk, finely chopped
Instructions
  1. ) Cook macaroni, as directed on its package, until it is still slightly firm (al dente) remove from heat, drain and rinse with cool water until room temperature to stop the cooking process. Set aside in medium bowl or serving dish.
  2. ) In a small bowl, whisk together the mayonnaise, relish, salt, pepper, and sugar. Fold in onion, green pepper, and red pepper. Pour the dressing over the salad and stir to combine. Season with additional salt and pepper to your preference. Serve or store in the refrigerator.
