  • Cook the sausage in a large pan over medium heat

  • Add the onion, red bell pepper, and garlic for about 1 minute to soften

  • Add in the seasonings

  • Put the chicken sausage back in the skillet and stir until it is warmed

  • 1-3 Tablespoons olive oil divided
  • 1 tablespoon of butter
  • 3 chicken andouille sausage links diced
  • 1 onion chopped about 1 cup
  • 1 red pepper chopped, about 1 cup
  • 4 garlic cloves minced
  • 2 medium sweet potatoes peeled and diced about 3 cups
  • 3/4 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon complete seasoning


  • Place the 1 tablespoon of olive oil and butter in a 12 inch cast iron skillet on medium heat.
  • Saute diced chicken andouille sausage links and set aside.
  • Add sweet potatoes and stir until well covered with oil and butter. Press them down to make sure they are evenly layered in the skillet. After about 10 minutes stir.
  • Add the onions, peppers, and seasonings and cook for about 10 minutes stirring occasionally. Add additional oil if needed to make sure the potatoes don’t stick to the pan and to ensure sweet potatoes cook until they become tender.
  • Add garlic and cook for about 2 minutes.
  • Return the sausage to the skillet and cook for about 3 minutes until warmed.
  • Serve immediately and enjoy!
